A great side-dish to baked chicken or pork. Add a little cayenne or other peppers to give a Southwestern kick.

Ingredients
  • 1. 1/2 cup finely ground cornmeal
  • 2. 1/2 cup butter, melted and cooled
  • 3. 1/4 cup sugar
  • 4. 2 large eggs
  • 5. 2/3 cups whole milk
  • 6. 1/4 cup cream
  • 7. 2 cups frozen corn, defrosted
  • 8. 2 8-ounce cans creamed corn
  • 9. kosher salt
  • 10. freshly ground black pepper
  • 11. 1/2 teaspoon paprika
  • 12. 2 tablespoon chives, for garnish
Directions
  • Step 1 Preheat oven to 375 degrees.
  • Step 2 In a large bowl, mix cornmeal and butter until smooth. Whisk in sugar, eggs, milk, and cream until incorporated. Fold in corn and creamed corn. Season with salt, pepper, and paprika.
  • Step 3 Pour into your baking dish and bake uncovered for 1 hour, or until center is set an top is golden brown. Garnish with chives and serve.
