A lite wonderful cake. My brother-in-law loves them

Ingredients
  • Cake:
  • 1. 2 cups sugar
  • 2. 4 eggs
  • 3. 1 1/2 cup Crisco
  • 4. 2 cups self-rising flour
  • 5. 2 teaspoons cinnamon
  • 6. 1 1/2 fresh carrots, shaved
  • Icing:
  • 7. 1 8-ounce package cream cheese
  • 8. 2 tablespoons vanilla
  • 9. 1 cup chopped pecans
  • 10. 1/2 stick margarine, softened
  • 11. 1 box confectioners' sugar
Directions
  • Step 1 Cake:
  • Step 2 Mix sugar, oil, and eggs. Add flour, cinnamon, and carrots.
  • Step 3 Pour into 3 9-inch layer cake pans.
  • Step 4 Bake for 30 minutes at 350 degrees.
  • Step 5 Icing:
  • Step 6 MIx together cream cheese, sugar, vanilla, and nuts until creamy.
  • Step 7 After cakes have cooled spread icing in the centers and on top and sides.
