Carrot Cake

A lite wonderful cake. My brother-in-law loves them
Ingredients
- Cake:
- 1. 2 cups sugar
- 2. 4 eggs
- 3. 1 1/2 cup Crisco
- 4. 2 cups self-rising flour
- 5. 2 teaspoons cinnamon
- 6. 1 1/2 fresh carrots, shaved
- Icing:
- 7. 1 8-ounce package cream cheese
- 8. 2 tablespoons vanilla
- 9. 1 cup chopped pecans
- 10. 1/2 stick margarine, softened
- 11. 1 box confectioners' sugar
Directions
- Step 1 Cake:
- Step 2 Mix sugar, oil, and eggs. Add flour, cinnamon, and carrots.
- Step 3 Pour into 3 9-inch layer cake pans.
- Step 4 Bake for 30 minutes at 350 degrees.
- Step 5 Icing:
- Step 6 MIx together cream cheese, sugar, vanilla, and nuts until creamy.
- Step 7 After cakes have cooled spread icing in the centers and on top and sides.
