Shrimp with a kick

Ingredients
  • 1. 3 pounds medium shrimp, peeled and deveined
  • 2. 3 green onions, chopped
  • 3. 1 tablespoon fresh grated ginger
  • 4. 1 tablespoon sesame seeds
  • 5. 1 6-ounce can tomato paste
  • 6. 1 medium sweet onion
  • 7. 2 cups rum
  • 8. 1 tablespoon sugar
  • 9. 1 tablespoon cornstarch
  • 10. 1 tablespoon sesame oil
  • 11. 1 pinch each of salt and pepper
  • 12. 2 tablespoons canola oil
  • 13. 4 tablespoons fresh minced garlic
  • 14. 1 tablespoon red pepper flakes
Directions
  • Step 1 In a large skillet heat oil until shimmering. Add onions, ginger, and garlic. Cook just until fragrant, about 20-25 seconds. Add shrimp, salt, and pepper and cook until shrimp start to turn pink. Add rum, tomato paste, red pepper flakes and sugar. Stir until sauce comes to a boil.
  • Step 2 Dissolve cornstarch in water, add sesame oil and pour into skillet. Cook until sauce thickens.
  • Step 3 Garnish with sesame seeds and green onions.
