Drunken Garlic Ginger Shrimp

Shrimp with a kick
Ingredients
- 1. 3 pounds medium shrimp, peeled and deveined
- 2. 3 green onions, chopped
- 3. 1 tablespoon fresh grated ginger
- 4. 1 tablespoon sesame seeds
- 5. 1 6-ounce can tomato paste
- 6. 1 medium sweet onion
- 7. 2 cups rum
- 8. 1 tablespoon sugar
- 9. 1 tablespoon cornstarch
- 10. 1 tablespoon sesame oil
- 11. 1 pinch each of salt and pepper
- 12. 2 tablespoons canola oil
- 13. 4 tablespoons fresh minced garlic
- 14. 1 tablespoon red pepper flakes
Directions
- Step 1 In a large skillet heat oil until shimmering. Add onions, ginger, and garlic. Cook just until fragrant, about 20-25 seconds. Add shrimp, salt, and pepper and cook until shrimp start to turn pink. Add rum, tomato paste, red pepper flakes and sugar. Stir until sauce comes to a boil.
- Step 2 Dissolve cornstarch in water, add sesame oil and pour into skillet. Cook until sauce thickens.
- Step 3 Garnish with sesame seeds and green onions.
