Tremendous cornbread recipe

Ingredients
  • 1. 1 cup sour cream
  • 2. 1/2 cup unsalted butter, melted
  • 3. 1/2 cup honey
  • 4. 2 large eggs
  • 5. 1 cup all-purpose flour
  • 6. 1 cup yellow cornmeal
  • 7. 2 teaspoons baking powder
  • 8. 1/4 teaspoon salt
  • 9. 6-ounces sharp cheddar, cubed
  • 10. 6 slices bacon, cooked and crumbled
  • 11. 3 scallions, sliced
Directions
  • Step 1 Preheat oven to 375 degrees.
  • Step 2 Combine sour cream, butter, honey, and eggs in a medium bowl, whisk to evenly combine.
  • Step 3 In a separate large bowl, whisk together flour, cornmeal, baking powder, and salt. Pour wet ingredients into the dry ingredients and stir until just combined.
  • Step 4 Grease a medium ovenproof skillet. Spread half the cornbread batter into the pan. Sprinkle cheese, bacon, and green onions on the top to create an even layer. Pour remaining batter on top and spread to cover the cheese.
  • Step 5 Bake for 25-30 minutes, until the cornbread is golden and cooked through. Let cool for 5 minutes in pan.
  • Step 6 Slice and serve with beans, jambalaya, or other dishes.
