Sweet and Spicy Hush Puppies

Everyone's favorite side to those fried fish meals, with a little twist.
- 1. 2 cups cornmeal
- 2. 1 1/2 cups buttermilk
- 3. medium sweet onion, finely chopped
- 4. 1/ cup brown sugar
- 5. 2 jalapeno peppers, seeded and chopped
- 6. canola oil for frying
- Step 1 In a large mixing bowl, combine cornmeal and buttermilk. The mixture should be pourable but not soupy. Add onions, jalapenos and brown sugar to the mixture and stir until well combined.
- Step 2 Heat oil to shimmering. Working in batches and by the spoonful, drop batter into the oil. Allow the batter to rise and then turn, browning on the other side. Remove and drain on paper towels.
