Out of all the vegetables, in all the world. sweet potatoes are my favorite. This souffle is the best way to serve them.

Ingredients
  • 1. 3 cups sweet potatoes, peeled, boiled, and mashed
  • 2. 1/2 cup butter
  • 3. 1 teaspoon vanilla
  • 4. 1 cup sugar
  • 5. 2 eggs
  • 6. 1/3 cup milk
  • Topping Mixture:
  • 7. 1/2 cup flour
  • 8. 1 1/2 cup pecans, chopped
  • 9. 1 cup brown sugar
  • 10. 1/2 cup butter
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 In a large mixing bowl, mix first six ingredients, being sure the mixture is smooth.
  • Step 3 Pour into a 9X13-inch, greased baking pan.
  • Step 4 Mix the last 4 ingredients smooth over the top of the sweet potato mixture.
  • Step 5 Cook for 25 minutes and the top is brown and crispy.
