Ingredients
  • 1. 1 1/2 cup self-rising cornmeal
  • 2. 1 medium onion, chopped
  • 3. 1 cup shredded cheddar cheese
  • 4. 3 jalapeno peppers chopped
  • 5. 1 8-ounce can cream-style corn
  • 6. 2 eggs beaten
  • 7. 1 cup buttermilk
  • 8. 1/2 cup oil
  • 9. pinch of cayenne pepper
Directions
  • Step 1 Preheat oven to 350 degrees
  • Step 2 In a large mixing bowl, Combine all ingredients except buttermilk. Mix until blended. Add buttermilk in small portions until mixture is well moistened, should be soupy.
  • Step 3 Pour mixture into a large, well-greased cast-iron skillet, and bake for 30-40 minutes or until golden brown and set.
